Apple Coffee Cake¶

- 1 ⅓ cups flour
- ¾ cup sugar
- 3 tsp baking powder
- ¼ tsp salt
- ¼ cup butter or margarine
- 1 egg, beaten
- ¾ cup milk
- 1 tsp vanilla
- 2 to 3 cooking apples
Topping:
- ⅓ cup packed brown sugar
- ½ tsp cinnamon
Put flour, sugar, baking powder and salt in a large bowl. Cut or rub in butter until crumbly. Make a well in the center. In another bowl, mix egg until frothy. Mix in milk and vanilla. Pour into well, stirring just until moistened. Pour into a greased 8x8 inch cake pan.
Peel and slice apples. Push apple pieces close together, well into the batter. Mix topping ingredients and sprinkle over top. Bake at 350°F for 30 to 40 minutes. Serve warm with whipped cream or ice cream. Serves 9.
