Banana Chocolate Chip Muffins

  • 3 bananas, well ripened and mashed
  • ¼ cup cooking oil
  • ¾ cup brown sugar
  • 1 large egg

  • 1 ¼ cups flour

  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 cup chocolate chips

Cream oil, sugar and egg together. Add bananas then flour, baking soda and salt. Mix in chocolate chips. Spoon into muffin cups. Bake at 350°F for 20 minutes. Yield: 12 large lunch box snacks.
