Best Bran Muffins

  • ¼ cup sunflower oil
  • ½ cup firmly packed brown sugar
  • ¼ cup molasses
  • 2 eggs, unbeaten
  • 1 cup buttermilk
  • 1 cup unbleached flour

  • 1 ½ tsp baking powder

  • ½ tsp baking soda
  • Salt
  • 1 ½ cups natural wheat bran
  • Chocolate chips
  • Hulled sunflower seeds

Mix oil and sugar together. Add molasses and eggs and beat together well. Add buttermilk and then bran. Combine flour, baking powder, baking soda and a little salt. Add to liquid ingredients. Place in greased muffin cups. Top with chocolate chips and sunflower seeds. Bake at 400°F for 18 to 20 minutes. Makes 1 dozen large muffins. Recipe doubles nicely.
