Cheddar Soda Bread

  • 4 cups all-purpose flour
  • ¼ cup granulated sugar
  • Salt
  • 1 Tbsp baking powder
  • 1 ½ tsp baking soda
  • ¼ cup butter

  • ½ cup grated cheddar cheese

  • ½ cup currants
  • 2 tsp caraway seeds
  • 2 eggs
  • 1 ¾ cups buttermilk

Combine sugar, flour, salt, baking soda and baking powder. Cut in butter until mixture is the consistency of crumbs. Stir in cheese, currants and caraway seeds. Beat eggs with buttermilk and add to mixture. Knead lightly on a floured surface approximately 10 times. Shape into a round ball or loaf. Place loaf in an 8 inch (20 cm) greased iron skillet, or on a greased baking sheet. Cut a large cross in the top. Bake at 350°F for 1 hour, or until golden brown.
