Dad's Super-duper Pancakes

  • 1 cup flour
  • 1 to 2 Tbsp sugar
  • 1 level Tbsp baking powder
  • ¼ tsp baking soda
  • 2 eggs
  • 1 mashed ripe banana

  • 1 cup milk

  • ½ cup frozen blueberries, or ½ cup thawed rhubarb pieces*
  • Pinch allspice or cloves

Mix all dry ingredients together. Mix all wet ingredients together separately. Add blueberries or rhubarb to dry ingredients. Mix wet and dry mixtures together gently. Preheat griddle to less than medium. Cook slowly, watching bottoms. Do not expect bubbles.

*Frozen, fresh rhubarb pieces can be thawed in microwave or with hot water.
