Lemon Bread¶

- ½ cup margarine
- 1 ½ cups sugar
- Grated rind of 1 lemon
- 2 eggs

1 ½ cups flour

1 tsp baking powder
- ¼ tsp salt
- ½ cup milk
- Juice of 1 lemon
- ½ cup sugar
Cream margarine and 1 ½ cups sugar well. Add lemon rind and eggs. Sift together flour, baking powder and salt. Add to creamed mixture. Stir in milk. Beat at high speed. Grease and flour 1 large loaf pan. Pour in batter. Bake at 375°F for 45 minutes. While still warm, glaze with lemon juice mixed with ½ cup sugar.
