Molly's Irish Whole Meal Bread

  • 12 oz whole meal flour or wheat and oat flour
  • 4 oz bran
  • 1 tsp sugar

  • 2 tsp baking soda

  • ½ tsp salt
  • ¾ pt buttermilk
  • 2 Tbsp vegetable oil

Preheat oven to 400°F. Preheat baking pan in oven. Mix dry ingredients thoroughly. Stir in oil and buttermilk quickly. Turn mixture onto a floured board. Knead lightly 4 or 5 times. Add more flour if necessary. Flatten into an oval shape 1 inch thick. Place on floured and heated baking pan. Draw a cross on top of bread dough. Bake for 40 to 45 minutes. The bread is baked when it sounds hollow when tapped. Wrap in a clean cloth and leave to cool on a wire rack.
