Partridgeberry Muffins

  • 1 ½ cups flour
  • ⅔ cup sugar
  • 2 ½ tsp baking powder
  • ¼ tsp salt
  • ¾ cup milk

  • ½ cup oil

  • 1 egg
  • 1 cup partridgeberries
  • 1 Tbsp grated lemon rind
  • 2 Tbsp sugar

Mix flour, ⅔ cup sugar, baking powder and salt. Beat egg. Add milk and oil to egg and mix well. Add egg mixture to dry ingredients as quickly as possible. Gently add partridgeberries. Spoon batter into greased muffin cups. Mix grated lemon rind with 2 tablespoons sugar. Sprinkle over top of muffins. Bake at 400°F for 18 to 20 minutes. Makes 12 muffins.
