Auntie Deborah's Nimmo Bay Yummies

  • ½ cup butter
  • ¼ cup white sugar
  • 6 Tbsp cocoa
  • 1 egg
  • 1 tsp vanilla
  • 1 ⅔ cups fine graham wafer crumbs
  • 1 cup desiccated coconut
  • 1 Tbsp wheat germ
  • ¼ cup butter

  • 2 cups icing sugar

  • 1 egg
  • 1 tsp almond flavouring
  • Touch mint flavouring
  • 2 squares unsweetened chocolate
  • 2 squares semi-sweet chocolate
  • 1 Tbsp butter
  • Slivered almonds

In a 9 inch square pan, combine the first 5 ingredients over low heat on stove, stirring until smooth and slightly thickened. Stir in graham wafer crumbs, coconut and wheat germ. Pack gently into pan. Beat together ¼ cup butter, icing sugar, egg, almond and mint flavourings. Place on top of cooled chocolate base. Heat chocolate and 1 tablespoon butter over hot water or in the microwave. Spread over icing sugar layer. Sprinkle with almonds. Freezes really well, if needed, or devour as required.
