Auntie Jennifer's Musgrave Harbour Cake

  • 4 eggs
  • 2 cups sugar
  • 1 cup oil
  • 1 cup water
  • 2 ½ tsp baking powder
  • 2 ½ cups flour

  • 1 tsp vanila

  • 3 or 4 squares unsweetened chocolate, grated
  • Mint and almond flavouring, to taste, optional

Sift baking powder and flour. In a large bowl, beat eggs vigorously, then slowly add sugar and oil. Alternately add flour mixture and water and blend in grated chocolate. Bake in a greased and floured 10 inch tube pan at 350°F for 1 hour. Dust with icing sugar or a thick, decadent, creamy chocolate icing.
