Auntie Jennifer's Musgrave Harbour Cake¶

- 4 eggs
- 2 cups sugar
- 1 cup oil
- 1 cup water
- 2 ½ tsp baking powder

2 ½ cups flour

1 tsp vanila
- 3 or 4 squares unsweetened chocolate, grated
- Mint and almond flavouring, to taste, optional
Sift baking powder and flour. In a large bowl, beat eggs vigorously, then slowly add sugar and oil. Alternately add flour mixture and water and blend in grated chocolate. Bake in a greased and floured 10 inch tube pan at 350°F for 1 hour. Dust with icing sugar or a thick, decadent, creamy chocolate icing.
