Date Squares¶

- ¾ cup water
- 250 g dates
- ½ tsp vanilla
- 1 ½ cups flour

1 ½ cups rolled oats

1 cup brown sugar, packed
- 1 tsp baking soda
- ¾ cup melted butter or margarine (not hot)
Boil dates in water until very soft. Mash and add vanilla. Let cool. Combine flour, rolled oats, brown sugar and baking soda. Add butter or margarine and mix well. Press a little more than ½ of the rolled oats mixture into bottom of an ungreased 9 inch square pan. Spread date mixture evenly over top. Press remaining rolled oats mixture over dates. Bake in preheated 350°F oven for 25 minutes. Let cool. Cut into squares.
