Emma Mitchell's Old Fashioned Gingerbread

  • ¼ cup butter
  • 1 cup molasses
  • ½ cup dark brown sugar
  • 1 ½ cups flour
  • 1 tsp baking powder

  • 1 tsp baking soda

  • 2 tsp ginger
  • 2 tsp cinnamon
  • 1 egg
  • 1 cup warm milk

Put butter, molasses and brown sugar in a saucepan on medium-low heat. Melt together. In another dish, place flour, baking powder, baking soda, ginger and cinnamon, mixing well. Add dry ingredients to molasses mixture on the stove. Beat in egg. Add heated milk. Pour into pan (preferably angel food pan) that has been sprayed with nonstick cooking oil or lined with wax paper. Bake at 350° F for approximately 35 minutes.

Double recipe for tube pan. Increase baking time accordingly.
