Fruit Pizza¶

- ½ cup margarine
- 1 cup flour
- ½ cup icing sugar
- 8 oz pkg cream cheese
- 1 tsp vanilla

1 large can crushed pineapple

1 cup pineapple juice
- 2 Tbsp sugar
- 1 tsp lemon juice
- Cornstarch
- Assorted fruit
Mix margarine, flour and ¼ cup icing sugar and press into lined pizza pan. Bake at 325°F for 8 to 10 minutes. Cream ¼ cup icing sugar, cream cheese and vanilla. Spread over baked crust. Drain pineapple and spread over cream cheese topping. Arrange assorted fruit over pineapple.
Glaze: Mix pineapple juice, sugar and lemon juice with a little cornstarch to thicken. Bring to a boil, cool slightly and pour over fruit.
