Low Fat Cherry Cheesecake Flan¶

- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- 1 ½ tsp baking powder
- ⅓ cup margarine, softened
- 2 egg whites
- 1 can cherry pie filling
Topping:
- 2 Tbsp all-purpose flour
- 2 cups low fat plain yogurt
- 1 egg, slightly beaten
- ⅔ cup granulated sugar
- ½ tsp almond flavouring
In food processor or bowl, combine flour, sugar, baking powder, margarine and egg whites. Mix well. Press onto bottom of 9 inch square cake, springform or flan pan. Spread pie filling on base.
Topping: In a bowl, sprinkle flour over yogurt. Add egg, sugar and almond flavouring. Mix until smooth. Pour over filling. Bake in a 350°F (180°C) oven for 60 to 70 minutes, or until set and golden. Serve warm or cold. Makes 12 servings.
