Low Fat Cocoa Squares¶

- ½ cup rolled oats
- 1 cup hot water
- 3 Tbsp butter
- ⅔ cup sugar
- 1 egg
- ⅓ cup low fat yogurt
- 1 cup white flour
- ¼ cup cocoa
- 1 tsp baking powder
- 1 tsp baking soda
- ¼ tsp salt
- 1 tsp vanilla
Icing:
- ½ cup icing sugar
- 1 Tbsp cocoa
- 1 Tbsp milk
- 1 Tbsp light cream cheese
Mix rolled oats with hot water. Let cool. Mix butter and sugar. Beat in egg, yogurt and vanilla. Stir in oat mixture. In separate bowl, mix flour, cocoa, baking powder, baking soda and salt. Stir in oat mixture just until combined. Do not overmix. Pour into greased 8 inch square pan and bake at 350°F for 30 minutes. Let cool and top with icing.
