No Egg Oatmeal Cookies

  • ½ cup sugar
  • 1 cup firmly packed brown sugar
  • 1 cup margarine or butter, softened
  • ½ cup water
  • 2 cups flour
  • 1 Tbsp vanilla

  • 1 tsp baking powder

  • 1 tsp baking soda
  • 1 tsp salt
  • 2 ½ cups quick cooking rolled oats
  • 1 cup coconut, shredded
  • 1 cup chopped nuts or chocolate chips, optional

Combine sugar, brown sugar, margarine, water and vanilla in a large bowl, beating until creamed. Add flour, baking powder, baking soda and salt. Mix well. Stir in oats, coconut, nuts and/or chocolate chips. Preheat oven to 375°F. Place rounded spoonsful of dough on an ungreased cookie sheet 1 to 2 inches apart. Bake at 375°F for 9 to 12 minutes, until golden brown. Makes 5 to 6 dozen cookies.
