Royal Rhubarb Pudding

Pearl Batten
Grade 1 Teacher (1956 - 1957, 1963 - 1987)

Bottom:

  • 2 cups diced rhubarb
  • ⅔ cup sugar
  • 3 Tbsp grated orange rind
  • 1 tsp cinnamon

Dough:

  • 1 cup less 1 Tbsp flour
  • 2 tsp baking powder
  • 2 Tbsp sugar
  • ¼ cup margarine
  • 1 egg
  • 3 Tbsp milk

Topping:

  • 4 Tbsp orange juice
  • 2 Tbsp sugar

Place ingredients for bottom into a medium sized dish. Combine flour, baking powder and 2 tablespoons sugar. Cut in margarine until mealy. Beat egg and milk together. Add dry ingredients to make dough. Drop by spoonsful over bottom layer. Bake at 350°F for 25 minutes. Drizzle combined topping ingredients over top and bake 5 minutes longer.
