Steamed Partridgeberry Pudding¶

Rum sauce optional
- 1 ½ cups all-purpose flour
- 3 tsp baking powder
- ½ cup sugar
- ¼ tsp salt
- ¼ cup margarine
- 1 ¼ cups fresh partridgeberries*
- ¾ cup milk
Sauce:
- ¼ cup butter
- ½ cup icing sugar
- 3 to 4 tsp rum, or to taste
Sift dry ingredients into a bowl. Rub in margarine. Add berries and then milk, stirring lightly and folding, to make a batter. Pour into a greased 1 quart mold. Place over boiling water and steam for 1 ½ hours.
Sauce: Cream butter in a double boiler over hot water. Add icing sugar, stirring constantly. Add rum. Stir constantly until thickened. Pour over warm pudding. Enjoy!
*Blueberries may also be used.
