Whipped Shortbread

  • 1 lb butter
  • 1 cup icing sugar
  • ½ cup cornstarch

  • 3 cups flour

  • 1 tsp vanilla

In a large bowl, beat butter with electric mixer for about 5 minutes. Add vanilla. Combine dry ingredients and gradually add to butter, beating until light and fluffy. Drop by teaspoonsful onto greased cookie sheets. Bake at 350° F for approximately 8 minutes, until slightly browned. Works great with cookie press too.
