Pork Tenderloin With Rosemary and Thyme¶

- 1 lb pork tenderloin
- 2 Tbsp Dijon mustard, approximately

2 tsp fresh rosemary

½ tsp thyme
- ¼ tsp crushed black peppercorns, optional
Spread tenderloin generously with Dijon mustard. Place in roasting pan. Sprinkle with remaining ingredients. Roast at 350°F for 35 to 45 minutes, or until no longer pink inside. To serve, cut into thin slices. Makes 3 servings.
