Pork Tenderloin With Rosemary and Thyme

  • 1 lb pork tenderloin
  • 2 Tbsp Dijon mustard, approximately
  • 2 tsp fresh rosemary

  • ½ tsp thyme

  • ¼ tsp crushed black peppercorns, optional

Spread tenderloin generously with Dijon mustard. Place in roasting pan. Sprinkle with remaining ingredients. Roast at 350°F for 35 to 45 minutes, or until no longer pink inside. To serve, cut into thin slices. Makes 3 servings.
