Curried Cauliflower

  • 1 head cauliflower, broken up (approximately 2 lb)
  • Salted water
  • 10 oz can condensed cream of chicken soup
  • ⅓ cup mayonnaise

  • 1 cup medium cheddar cheese, grated

  • 1 tsp curry powder
  • 2 Tbsp margarine
  • ½ cup dry bread crumbs

Cook cauliflower in salted water until barely cooked. Drain and put into a 2 L casserole dish. Mix together soup, mayonnaise, cheese and curry powder. Spoon over top of cauliflower. Melt butter in small saucepan. Stir in crumbs. Sprinkle over top. Bake, uncovered, in a 350°F oven for 30 to 40 minutes.
