Melanie's Baked Stuffed Tomatoes

  • 4 firm ripe tomatoes
  • 2 cloves garlic, finely chopped
  • ½ cup fresh parsley or basil
  • ¼ cup Parmesan cheese
  • ½ cup fresh bread crumbs, or more

  • 2 Tbsp olive oil or melted butter

  • ½ tsp salt
  • ¼ tsp pepper

Remove cores from tomatoes and remove about ½ of the insides, removing all seeds. Combine remaining ingredients and stuff tomatoes with mixture. Bake at 350°F for 20 minutes.
